Brief Bio:
I am a Mid-western girl turned Vermonter (can you be that?). I have been a registered dietitian for 27 years (yikes) and have loved every minute of it. I have recently graduated with a Masters in Healthcare Administration and am deeply interested in moving preventative health care to the center of health care reform. I believe strongly that feeding your body well and moving your body regularly are two of the most important things you will do in life. I now live in South Burlington along with my partner, Sue Dodge, our 5 kids, and our one sweet dog, Ruby.

I am the co-owner of Whole Health Nutrition and Pure Energy Espresso and Smoothie Bar.

Health related life story:
My passion about food and nutrition is reinforced by my awe of the human body. My work as a nutritionist reflects my love and appreciation of food and respect for the human body. For me this has been reinforced so many times throughout my life – through my life as a ballet dancer, in running my first marathon, in my first century ride, and in the every day demands of being me. My kids will tell you that a popular saying in our home is “you are what you eat and you only get one body so take care of it”. Nutrition is the key to enhancing all that we do in life. By definition nutrition is the organic processed of being nourished. Food should be friend, fuel, and fun. My practice is grounded in the power of nutrition meeting the pleasure of eating. I love discovering new nutrition tidbits (latest science) and sharing these finds with my clients.

Where you are most likely to be seen on a Saturday morning:
If we are talking early Saturday morning you will find me sipping a good cup of coffee and eating a bowl of granola with berries, nuts, and flaxseeds. Not too long after it would be off to a long run or a long bike ride. I run outside year round!

If you were on a desert island – what is the one food you couldn’t live without? 
This is an easy one EVOO. Extra Virgin Olive Oil is the gift of the gods. I figure on a dessert island I would not only use it to prepare this fish I caught but also as my moisturizer so I would be covered on both ends. Good food and good beauty products!

tuscan salad

Tuscan Kale Salad
For the salad:
1 large head of kale; shredded
1/4 cup shredded parmesan cheese

For the dressing:
5 garlic cloves
1/4 cup shredded parmesan cheese
1/3 cup lemon juice
1/2 cup EVOO
Salt and Pepper; as needed

In a Cuisinart, or with a mortar and pestle, grind garlic until smooth. If using a Cuisinart, add all other ingredients and process until smooth. If using a mortar and pestle, transfer to a medium bowl, add other ingredients and whisk until fully combined. Toss with kale and additional cheese.

I love this recipe because it is simple, it tastes good, it is paced with nutrition AND my kids will eat it. It also tastes great the next day. That is a plus too.
