Try using a vegetable spiralizer or try cutting zucchini thin into noodles and serve this with tomato sauce instead of pasta.  This trick is a great for individuals with diabetes or trying to lose weight. To retain more nutrients from zucchini, eat raw, or steam or sauté lightly. Avoid boiling which can leech out nutrients.
