Mediterranean Quinoa Summer Salad

Meatless Monday doesn’t have to be bland! This Mediterranean quinoa salad is not only packed with flavor, it’s packed with nutrients, healthy fats from the olives and olive oil, protein from the quinoa, chickpeas and feta cheese, and fiber from almost all the ingredients.


-3 cups cooked quinoa (1.5 cups dry)

-1/2 cup olive oil

-2 Tbsp balsamic vinegar

-1 cup chickpeas

-1/2 cup pitted kalamata olives

-1/2 cup crumbles feta cheese

-1 roasted red bell pepper, sliced

-1/2 cup cherry tomatoes, diced

-2 mini cucumbers

-3 cups dressed arugula

-Garlic, basil and thyme to taste (fresh or dried)

-salt and pepper to taste

Mix all together and enjoy!
